Vegetarian and vegan diets are not daunting and are flavorable. Desserts are fabulous. Ever have a vegan Tiramisu? Delicious. One restaurant in NYC has made Mondays their Vegitarian/Vegan night and it has become one of their busiest nights. Baby Cakes bakery is very popular and people don't realize the items are vegan. I don't miss meat or dairy and am enjoying vegan cooking. I was basically a vegitarian growing up. I preferred the salads, vegetables and fruits to meat. Try a vegetarian meal once a week. It is my challenge to you.
